Steve is a curing & smoking expert, teacher, presenter, culinary consultant and award-winning author. 

​After a background in media, Steven’s food career began nearly 20 years ago when he joined Hugh Fearnley-Whittingstall’s River Cottage team, regularly appearing in the tv series and being instrumental in establishing the internationally acclaimed cookery school on the Devon / Dorset border.

Bod Griffiths runs Vale House Kitchen with his wife Annie, and after ten years of working with a whole range of fantastic tutors is excited to start leading his own courses. He grew up helping his Grandmother in the kitchen, and it’s from her that he got his love for traditional skills like baking bread and making preserves, as well as a profound appreciation for cooking in tune with the seasons.

Kieran Lenihan is an inspirational modern chef with a career as rich and varied as the Mediterranean and British influences that inform his reputation as a burgeoning British Talent.
Born in Weston-super-Mare, Kieran’s love of local seafood, and passion for creating dynamic plates from locally-sourced and seasonal produce, have cemented his reputation as popular head chef in the south west.

Since his first job in a local bakery Andy has had a passion for real bread baking.
After training in London and working in restaurants and top gastropubs Andy moved via Pembrokeshire to settle at River Cottage HQ where he worked his way up to Head chef. He is passionate about showing you how to bake the perfect loaf as well as keeping your sourdough starter healthy.

Adrian is a Landscape Ecologist, writer and forager living on the Mendip Hills Somerset. He grew up in the New Forest where his love of the countryside and natural history began.
Adrian became a University lecturer and researcher in landscape ecology, conservation and biogeography. He is an elected Fellow of the Royal Geographical Society.

Having picked up a fly rod at the age of 7, Neil has nearly 40 years’ experience of casting flies at all manner of species of fish.
Neil was coached at junior level by world renowned Spey Caster, Simon Gawesworth, with whom he entered many casting tournaments across the country and in Europe. Now as a fully qualified instructor Neil spends many hours on the water passing on his skills to others.

Martin Knight started keeping bees over a decade ago, in the hope that local honey would help his daughter’s hay fever – and yes, it really does work! He could’ve bought a jar from his local farm shop but decided he’d like to know more about these beautiful creatures.

Country conservation and shooting are in Franks blood. Having taken up game shooting from an early age, Frank is now a qualified CPSA instructor and has been very privileged to have shot over many prestigious estates throughout the UK. He employs a full time game keeper who rears the majority of the birds released on the Manor Farm Estate.

Pam gained her wealth of expertise in preserving foods when she owned ‘Thursday Cottage’, a small artisan preserves company producing exceptionally good jams, marmalades and curds. She has written many best selling books and her latest book ‘The Book of Preserves” was published in 2019.
