Pig butchery – 2 days course
The 2 day advanced pig course will include all of the skills from the 1 day course and in addition you will learn how to make use of the whole animal, wasting nothing: from smoking, storing your pork in the correct manner, all aspects of curing from bacon and salamis to cottechino and getting the best from the offal and the blood. We’ll be tasting as we go, and porky lunch is provided both days!
