Explore the bounty of the countryside with this fascinating Introduction to Foraging Course. You’ll gather and prepare your own wild ingredients, gaining knowledge, skills and experience from expert forager and landscape ecologist, Adrian Boots.

• How to forage sustainably within the law and with good practice
• How to safely collect prepare and cook common seasonal wild foods
• How to identify common seasonal edible and non-edible plants and fungi, and the habitats in which to find them

The British countryside is overflowing with delicious wild ingredients that will spice up your cooking, but novice foragers may be nervous about getting started – and of course, it’s absolutely crucial to know what you’re picking and make sure it’s safe to eat. So, join us for a day of foraging under the keen eye of expert forager Adrian Boots!

We’ll spend the morning on a walk through the beautiful countryside surrounding Vale House Kitchen, picking our own ingredients, and learning more from Adrian about landscape features, habitats, associated trees and plants species, and their relationships and seasonality with wild food. It’s a fascinating chance to learn about the history from our ancient hunter gatherer ancestors through to today’s culture including ecology, conservation, safety, rules and regulations.

Returning to Vale House Kitchen for a fantastic seasonal foragers’ lunch, and then spend the afternoon in the classroom turning our freshly-gathered goodies into some delicious recipes. You’ll be able to take plenty of your own creations home, and will also take away a course booklet full of recipes and tips.

Adrian Boots

Adrian is a Landscape Ecologist, writer and forager living on the Mendip Hills Somerset. He grew up in the New Forest where his love of the countryside and natural history began. At University he graduated with a BSc in Geography and Environmental Management and an MSc in Research, and subsequently became a University lecturer and researcher in landscape ecology, conservation and biogeography.
