Fresh fish is a truly wonderful ingredient to work with in the kitchen, but can often be a little intimidating if you don’t cook it regularly, with quite a few pitfalls to avoid. This Fish Cookery Course is designed to give you the confidence you need to whip up fabulous fish dishes, covering everything from sustainable sourcing, to basic preparation skills, to delicious recipes.

The course begins with an introductory talk about buying your ingredients, and how to find and choose the freshest, highest quality fish, as well as how to navigate the tricky minefield of sustainability. After that you’ll get stuck in, with a series of demonstration-led cookery lessons to help you master all the skills you need; including how to filet, scale and skin fresh fish, the art of smoking and curing your own fish, and mouth-watering quick recipes that make it really easy to put fish on the menu at home. What’s more, we hope that by giving you the confidence and key skills to deal with fresh fish as an ingredient, we’ll liberate your creativity and help you feel able to experiment in your own kitchen.
As with all our cookery courses, one of the best bits is that we’ll be tasting and enjoying everything we make as we go along, so make sure you bring a hearty appetite with you! A scrumptious lunch is also included for all attendees, and you’ll leave with a folder of recipes to use at home.
